橄榄油真假怎么辨别?

特级初榨橄榄油的酸度一般在0.3%-0.8%之间,消费者在买橄榄油的时候不应该过于追求过低的酸度值,因为天然的橄榄果汁不可能有过低的酸度!!除非通过添加化学制品人为降低酸度!!


橄榄油在中国本土的产量很少,市面上的橄榄油基本上都是从国外进口来的,尤其是从欧洲进口的比较多。西班牙是出口橄榄油的大国,一般认为沿地中海特别是希腊的橄榄油品质好,主要是因为那里的空气、水土、阳光非常适合橄榄果树生长。


要想辨别橄榄油真假,首先介绍一下橄榄油是怎么来的,其实橄榄油就是橄榄果的果汁。每年的年底11月左右是欧洲各国橄榄果的收获季节,当把成熟的橄榄果采摘回来,经过机械分拣,橄榄果尽快进入机械压榨。这个阶段影响橄榄油品质的因素主要是:收获季节的天气、空气含水量、是否迅速分拣迅速通过机械冷压榨。压榨好的果汁装进很大的不锈钢储存罐,专业厂家都有很好的储藏设备,所以橄榄油从压榨到分装这段时间品质不会改变。我们一般在市面上看到的日期都是分装日期,从分装日期到可食用日期在常温下一般建议在2年以内食用完,但是如果在运输销售过程中间储藏条件好,橄榄油即使过了2年也有食用价值,只是时间久的橄榄油也许某些理化指标稍微升高一些,比如酸度,特级初榨橄榄油的酸度一般在0.3%-0.8%之间,消费者在买橄榄油的时候不应该过于追求过低的酸度值,因为天然的橄榄果汁不可能有过低的酸度!!除非通过添加化学制品人为降低酸度!!

橄榄油真假怎么辨别?

普通消费者如何辨别真假橄榄油呢,我们总结以下几个妙招:


一、看颜色,把橄榄油倒入白色的碗里,真的橄榄油颜色是黄里透着淡淡的绿色,摇晃的时候油质感很强,你可以想象以下,橄榄果的果汁天然应该是什么颜色,橄榄油就应该是什么颜色。假的橄榄油黄黄的、水质样,没有生命力的感觉。


二、闻气味,真的橄榄油开瓶的时候会有一种成熟橄榄果的果香味,假的橄榄油也可能人工添加什么香精来迎合中国人的口味,如果闻出来豆油和花生油的生腥说明橄榄油里添加了大量的豆油或者花生油。


三、尝味道,把橄榄油倒在干净的玻璃杯里,先用白开水漱口,然后呷一小口,放在口腔不要着急咽下去,让橄榄油轻轻从舌尖滑过舌中然后到达舌根,真的橄榄油辣味会在舌根集中。假的橄榄油味淡,没有什么辣味,甚至只能感觉到豆油、花生油的腥味。


四、验手续,正规进口商进口橄榄油必须经过海关和商检,那么我们可以从进口商有没有正规的海关《进口单》和商检《卫生证书》、《货物清单》来判定此批次橄榄油的真假。我们检查进口商的卫生证书时要注意进口商能否提供日期连续的卫生证书,如果不能提供连续的卫生证书原件,只能说明这家进口商前几年进口过橄榄油,而不能说明这家进口商近进口过橄榄油,另一方面我们要看货物清单上显示的包装是不是以瓶和箱计算的,如果显示的是以大油罐装载的,那么只能说明这家进口商的橄榄油是进口的但不是原装的。


五、读标签,真的经过海关进口的橄榄油的标签都有中文标签,有些人认为原装进口的就不应该有中文标签那是错误的认识,如果原装进口的食品包装上面没有中文标签可以说一定是假货!!橄榄油的中文标签有强制性的规定内容,比如:中文品名、净含量、生产(分装)日期、保质期、橄榄果实年份、生产商和进口商的详细联系方式、酸度值、反式脂肪酸含量等等。特别是标签新规定里的反式脂肪酸含量,以前只要求标明酸度值,实际上很多低档的橄榄油酸度值不是很高,但是如果特级初榨橄榄油里掺杂了很多纯橄榄油她骗不过反式脂肪酸的含量检测,真的特级初榨橄榄油的反式脂肪酸含量为零,一旦掺杂进纯橄榄油,她的反式脂肪酸含量就会上升而被检测出来!!


六、比价格,从欧洲的橄榄果园到压榨成橄榄油,然后经过包装、海上运输、中国进口关税和、中国总代理、省地级代理、超市零售,每个环节都需要成本都要赚取一定的利润,如果终的价格很低,基本可以判定不是很真。但是也不是说橄榄油越贵质量越好,价格只是判定真假的一个方面。

Fourth, the formalities of inspection, regular importers import olive oil must go through customs and commodity inspection, then we can judge the authenticity of this batch of olive oil from whether the importer has a formal Customs Import List, commodity inspection "Health Certificate" and "Goods List". When we inspect the importer's health certificate, we should pay attention to whether the importer can provide the health certificate with a continuous date. If the original of the health certificate is not available, we can only say that the importer imported olive oil in previous years, but not that the importer has recently imported olive oil. On the other hand, we should look at the list of goods. The package shown is calculated in bottles and containers. If the package shown is loaded in large tanks, it can only be said that the importer's olive oil is imported but not original.




5. Reading labels, the real imported olive oil labels have Chinese labels. Some people think that the original imported olive oil labels should not have Chinese labels, which is wrong understanding. If there is no Chinese label on the original imported food packaging, it can be said that it must be fake!! The Chinese label of olive oil has mandatory provisions, such as: Chinese name, net content, date of production (sub-package), shelf life, year of olive fruit, contact details between producers and importers, acidity value, trans fatty acid content and so on. Especially the content of trans fatty acids in the new label regulations, which used to require only the acidity value, in fact, many low-grade olive oil acidity value is not very high, but if the extra virgin olive oil is doped with a lot of pure olive oil, she can not deceive the content of trans fatty acids detection, really extra virgin olive oil trans fatty acids. Zero content, once doped with pure olive oil, her trans fatty acid content will rise and be detected!!




6. Compared with the price, from European olive orchards to pressed olive oil, and then through packaging, maritime transportation, import tariffs and tariffs in China, China's general agent, provincial and prefectural agents, supermarket retail, each link needs cost to earn a certain profit. If the final price is very low, it can be judged that it is not true. But it's not that the more expensive olive oil is, the better its quality. Price is only one aspect of judging whether it's true or not.
