起泡酒是怎样炼成的?


没有气泡的起泡酒是没有灵魂的,因此了解气泡产生的过程尤为重要。与静止葡萄酒不同,起泡酒需要历经两轮发酵,第一轮酿造干型基酒(Base Wine),产生酒精;第二轮则释放二氧化碳气体。


目前常见的起泡酒酿造方法有5种,分别是传统法(Traditional Method)、转移法(Transfer Method)、罐中发酵法(Tank Method)、阿斯蒂法(Asti Method)和加二氧化碳法(Carbonation)。


1. 传统法


传统法工序繁琐,因此在传统法下酿造的起泡酒档次很高,气泡十分细密,价格也不菲,比如法国的香槟和意大利的弗朗齐亚柯达起泡酒(Franciacorta)。


传统法的酿造原理是让基酒在特定的酒瓶中进行二次发酵,让发酵后死亡的酵母(亦称酒泥)与酒液进行长时间的接触,在这个过程中,酒液的复杂度提升且带有面包、饼干和烘烤的风味。接下来就需要人工倒转酒瓶来使酒泥积累在瓶颈上,转瓶结束后将瓶颈浸入冰冷的盐水中可以使酒泥冻结,瓶中出现清澈的酒液。除去了酒泥,还需要用调味液(即酒液和糖分的混合液)将酒瓶加满,在重新加塞之后,一瓶传统法酿造的起泡酒就完成了。

2. 转移法


转移法的第二轮发酵也在瓶中进行,在此之前,转移法的所有酿造步骤都与传统法相同,差别就在于二次发酵后,所有酒液会在压力下倒入密封罐,在罐中的酒泥沉淀被过滤掉之后,加入带有糖分的混合液,最后再重新装瓶。


转移法可以生产出品质优良但比传统法价格更低的起泡酒,且该种方式可以大批量酿制,因此品质和风格都趋于统一。

How is sparkling wine made?


There is no soul in sparkling wine without bubbles, so it is very important to understand the process of bubble formation. Unlike stationary wines, sparkling wines undergo two rounds of fermentation, the first to produce Base Wine to produce alcohol, and the second to release carbon dioxide gas.


At present, there are five common methods for brewing sparkling wine, namely traditional method, transfer method, Tank method, Asti method and Carbonation method.


1. traditional law


Traditional methods are cumbersome, so sparkling wines brewed under traditional methods are of high grade, very fine bubbles and high prices, such as French champagne and Italian Franciacorta.


The traditional brewing principle is that base liquor is fermented twice in a specific bottle, and yeast (also known as mashed liquor) that dies after fermentation is in contact with liquor for a long time. In this process, liquor is more complex and has the flavor of bread, biscuits and baking. Next, it is necessary to manually reverse the bottle to accumulate the slurry on the bottleneck. After the bottle is turned, the slurry can be frozen by immersing the bottleneck in cold brine, resulting in a clear liquor in the bottle. After removing the mud, the bottle needs to be filled with seasoning liquor (a mixture of liquor and sugar). After refilling, a bottle of traditional sparkling liquor is completed.


2. transfer method


The second round of transfer fermentation is also carried out in bottles. Before that, all the steps of transfer fermentation are the same as those of traditional fermentation. The difference is that after secondary fermentation, all liquor will be poured into a sealed tank under pressure. After the sludge precipitation in the tank is filtered out, the mixed liquor with sugar is added, and then the bottle is refilled.


Transfer method can produce sparkling wine with good quality but lower price than traditional method, and this method can be brewed in large quantities, so the quality and style tend to be unified.
